The Simplest Chocolate Mousse ever. No cream, no eggs - just three simple ingredients. Light, airy, and deeply chocolatey. Pure and simple. All in 5 minutes.

Makes 1 cup of 180ml
Finely chopped Cacao - 40g (1 entire tablet of cacao) - We used our Anamalai cacao here.
2-3 tsp raw sugar
35-40ml water
Extra Ice and Water for Ice bath
We recommend finely chopping the cacao. In warmer climates, break the cacao directly in the saucepan and stir lightly till it is well combined.
Instructions
Chop cacao finely.
Add chopped cacao with the raw sugar to a bowl.
Meanwhile bring water to a boil. Once boiling pour over the cacao and whisk until it's smooth and glossy.
Add water and ice to another larger container to form an ice bath.
Place the bowl with cacao on the ice bath and begin whisking vigorously. The mixture will slowly start thickening.
Keep whisking till it starts forming stiff peaks. For smaller quantities, this will come together in less than a few minutes. For larger quantities, it may take up to 10 minutes or more.
Once ready, take it off the ice bath immediately and pour into a bowl.
